The nobles were also characterized by fair complexion and blond hair. The king himself was the best example of such a type.
Frenchman Jordan Claude wrote: "Poles are generally strong, of medium height, white complexion and light hair with vivid color and gloss ... There is no other nation in Europe that would be better built than Poles
According to another suorce, the king in his youth was "very beautiful, perfectly built very tall and proportionally built", only with time came "immeasurable obesity". His son Aleksander looked similarly, "a tall and well-built young man who looks truly Polish."
His older brother Jakub represented a different type, distinguished by "dark complexion and hair, slim figure and low height, which looks more like a Frenchman or a Spaniard than a Pole. Jakub resembles more his French mother.

His mother is Vlach, Zofia Sobieska (Danilowicz). If you want to see Polish Vlach nobles, go to thread Classify Cumansky Dad, he descended from same Szlachta family as Sobieski mother (Szasz Central European Noblility)

It seem you are mixing everything dude. The Danilowicz are Ruthenian (Ukrainian) nobles noted since 14c. Probably the name came from Toponym Danilowicze (Belarus) or the first name Danilo.
As high nobles per se they couldn’t be Vlachs (nomadic pastors). Usually genealogist were trying to find the meaning of coat of arms of nobles and present noble family as ancient as possible, the best when they could trace from Roman Emperor. Danilowiczes have the SAS coat of arm- very popular in Ruthenia. There is whole discussion about the meaning of this coat and the legends about its ancestry. You can read it here https://en.wikipedia.org/wiki/Sas_coat_of_arms
The most popular meaning say that the origin of SAS arms is derived from Transylvanian Saxons.
The Sibenburg is indeed close to Valachia Princiality that’s why you could mix it.
Please note that Danilowicz is just a sure name. Not all of them are nobles.
They could even be Jewish.
@ OP,
Would you say that the Vlach input into the Polish ethnos is understated?
